These delicious chocolate truffles are quick and easy to make. Plus, they are healthy!
Crush walnuts in a food processor until fine. Add the cacao powder and combine. Add the dates gradually, blending as you go. Add vanilla and blend until well combined (will be sticky). Roll batter into your preferred size of balls and roll balls in cacao or coconut, if desired (or just eat them plain). Refrigerate for about 30 minutes to allow them to harden.
