Healthy, low calorie slow cooked Fuji apples, marinating in a sweet sauce made with apple cider, brown sugar and spices.
Spray the inside of the crockpot with cooking spray.
In the bowl of the crockpot, add apples, lemon juice, cinnamon, nutmeg and brown sugar and stevia. Mix until the mixture is coating the apples.
In a measuring cup add apple cider and cornstarch. Mix to combine. Pour over the apples. Put the lid on and set crockpot on low. Cook for 3-4 hours until apples are tender. At about halfway through the cooking time, stir the apples.
Serve with ice cream or in yogurt, oatmeal or as a side dish with pork.
