Description

Moist and tasty muffins that the kids will love. They are full of bananas, peanut butter and mini chocolate chips which combine to make this a special snack or a delicious breakfast!

Ingredients

  • ½ cups Butter, Softened
  • 1 cup Sugar
  • 2 whole Eggs
  • 1 cup Mashed Ripe Bananas
  • ⅔ cups Peanut Butter
  • 1 Tablespoon Milk
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ¾ cups Miniature Chocolate Chips

Preparation

Preheat oven to 350 F. Grease your mini muffin pans and set aside. Recipe makes roughly 4 dozen mini muffins.

In a large bowl using an electric mixer, cream butter and sugar until light and fluffy, about 3 minutes. Add eggs, one at a time, beating well after each addition. Beat in the bananas, peanut butter, milk and vanilla until well combined.

In a medium sized bowl combine the flour, baking soda and salt then add it into the creamed mixture just until moistened. Fold in chips.

Fill greased mini muffin tins three-fourths full. Bake at 350 F for 14-16 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from the pans to wire racks.

These are awesome! Moist and loaded with flavor. My niece thinks they taste like a chocolate chip cookie. I definitely picked up on the banana and peanut butter. Everyone enjoyed them very much. Definitely going into my permanent recipe file. Thank you so much for sharing!
