It only takes 10 minutes to throw this melt-in-your-mouth coffee cake together. Pop it in the oven and impress your friends and family with an amazing breakfast treat or afternoon snack!
Heat oven to 350 F. Grease a 9 x 13 pan and set it aside.
For the topping: Combine all of the topping ingredients in a food processor and pulse together until crumbly. Transfer to another bowl.
For the cake: Into the food processor add flour, baking powder, sugar, and salt. Pulse 2-3 times. Cut in the butter using 2 knives then pulse until you have a cornmeal consistency (pulse it 2-4 times).
In a small mixing bowl, mix together the eggs, milk, and vanilla. Add this into the flour mixture in the food processor and pulse 2-3 times just to mix.
Put half of the batter into the prepared pan (see note below*). Sprinkle with half of the topping. Use a spoon and add the rest of the batter then sprinkle with remaining topping. Bake 35-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
* Notes: The batter will be thick so spread it to corners of the pan with a scraper. I end up spooning the second layer of batter into the pan in dollops, so as not to totally destroy that first layer of topping.
