Description

The delicious combination of blueberries and fresh lemon zest in an easy-to-make sweet quick bread.

Ingredients

  • 2 whole Eggs
  • 1-¼ cup Sugar
  • 1 stick Unsalted Butter, At Room Temperature
  • ½ cups Ricotta Cheese
  • 1 teaspoon Vanilla
  • 3 whole Lemons, Zest Only
  • ½ cups Buttermilk
  • 1-¾ cup All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Blueberries
  • Powdered Sugar For Dusting (optional)

Preparation

Add the eggs and sugar to a large bowl and beat until thoroughly combined and lightened in color. Beat in the butter followed by the ricotta cheese, vanilla, lemon zest and buttermilk.

In a separate bowl, combine the flour, baking powder and salt. Beat the dry ingredients into the wet until mixed. Fold in the blueberries and mix by hand just until combined.

Pour the batter into a buttered and floured loaf pan and bake in a preheated 350ºF oven for 1 hour or until a cake tester comes out clean. Allow to cool before removing from the pan and dust with powdered sugar, if desired.

I have made this loaf and it is absolutely incredible! People love it. Has anyone tried making this recipe into muffins? Just looking for suggestions on how long to bake–thinking 20 to 25 minutes?

I made this as a gift for a co-worker and it was a big hit! It was so moist and delicious and had people asking for the recipe. Thanks for sharing and I will definately be making this again, except this time it will be for me!

We loved this bread! It only lasted 24 hours in this house. Costco used to make a lemon blueberry muffin that we loved and this was very similar in taste. About to make this again, but in muffin form. Thanks for sharing!

This was tasty, but not mind blowing. The lemon flavour was very subtle, which can be a good thing or bad thing. I was hoping for a little more lemon punch. Very moist!

Oh, my goodness. So moist, so yummy. We added too many blueberries (our fault, not the recipe). Still turned out great, (just harder to cut). We’ll make this again! And again! Thank you!
