This is another recipe I grew up with from my Mom. This is a moist quick bread. Ask for a discount at the grocery store for bananas already gone to the black side, then you won’t have to wait to make it.
Dissolve the baking soda in the water. Let sit until you are ready to add it to the rest of ingredients.
Mix ingredients in the order given. Bake for 1 to 1 1/2 hours at 350 degrees.
The bananas should be beyond ripe and very soft. Skins should be dark and black, with some yellow still showing.
Bake time depends on your oven. My mom’s recipe says one hour, but a friend’s oven took almost 90 minutes. Check to see if it’s done by doing the toothpick or knife test. (If the toothpick comes out clean, it’s done!)
