Description

A very festive treat for Halloween!

Ingredients

  • 2 sticks Butter, Softened
  • 1-½ cup Granulated Sugar, Divided
  • 1 whole Egg
  • 2 Tablespoons Lemon Juice
  • 2 teaspoons Lemon Zest
  • ⅛ teaspoons Salt
  • 3 cups All-purpose Flour
  • ½ teaspoons Baking Soda
  • Red Food Dye
  • Yellow Food Dye

Preparation

Combine butter and 1 cup sugar in a large bowl; beat at medium speed until creamy. Add egg, lemon juice, lemon zest, and salt. Continue beating until well mixed. Add flour and baking soda; beat until well mixed.

Divide dough into thirds. Press one-third of the white dough evenly onto the bottom of a loaf pan that you have lined with foil, waxed, or parchment paper. Place another one-third of the dough into a bowl and add yellow and red food dye to make it orange (refer to the chart on the back of your box). Once it is mixed evenly, press the orange dough evenly over the white dough.

In another bowl, add the final amount of dough and dye it yellow. Press that evenly over the orange dough. Cover and refrigerate until firm (2 hours or overnight is best).

Once chilled, invert your loaf pan and unwrap the dough. Flip it back over and place it on a cutting board. Cut the loaf crosswise into 1/4-inch slices using a sharp knife, trimming edges to make them even, if necessary. Cut each slice into 6 wedges.

Place wedges 1-inch apart onto an ungreased cookie sheet. Bake for 7 to 10 minutes in a preheated 375-degree oven. Place cookies straight into a bowl with the remaining 1/2 cup sugar and coat. Place coated cookies on a baking rack to cool.

I just made these with the kids, and they are really adorable! I had better luck dipping them in sugar before baking them and spraying the pan with cooking spray before putting the cookies on. Great recipe!

Made these last night and this morning. I couldn’t tell the size of them from the picture… they are super tiny and perfect sized!

I also could not take them off the pan and put them directly into sugar – they were falling apart. So I left them on the pan and sprinkled sugar on them. After they cooled I moved them.

They taste really good too!

Finally made these cookies last night (after I’d been to the store to buy a lemon:) ). They were indeed super easy. My kids (ages 7&8) really enjoyed helping and it was a recipe that lent itself to their help ~ they mixed up the orange and yellow dough portions for me. You can see that the cookies are adorable, I’ve said they were easy…the big bonus, in my opinion, is that they are scrumdidlyumptious!!! SO YUMMY! I cut them pretty small, they are bite size and I’m already wishing I’d made a double recipe. They’re going FAST!! They actually taste like the sugar cookies from Cheryl’s Cookies (which just happen to be my favorite cookie). I’m thrilled with this recipe and plan to use it at Christmas as well. The consistency will work well in my cookie press. Thanks for the awesome recipe Kaitlin!

I’m not usually a sugar cookie fan, but the lemon gives them a very interesting taste. They were very easy to make, too. Cute, yummy, and easy – can’t beat that!

I had better results from using cooking spray on the pan and dipping the cookies in sugar before baking. Great recipe! Very cute.

This is such a quick and easy recipe to make! The cookies turn out so stinkin’ cute, too! I can’t get over them. Mine were really tiny and made over 100!! But, I thought they were really cute at such a tiny size. I’ll try a smaller loaf pan next time.
