I love recipes that use ingredients that I always have on hand. This is one and as far as muffins go, it’s about as moist as you can make!
Preheat oven to 400ºF.
Combine cereal, milk and cranberries in a large bowl. Mash the ingredients a little and let stand 10 minutes.
In a separate bowl mix flour, baking soda, cinnamon and salt.
Add eggs, oil, applesauce and sugar into the cereal mixture. Stir well. Add flour mixture to the cereal mixture. Stir well.
Line a 12-count muffin pan with paper wrappers and fill each to the top with batter. Bake at 400ºF for 22 minutes.
