Description

This pie is literally the easiest and most delicious pie you’ll make. Plus it has oatmeal in it, which clearly makes it health food!

Ingredients

  • 1 whole Prepared (not Baked) 9-inch Pie Crust
  • ⅓ cups Semi-Sweet Chocolate Chips
  • ⅓ cups Softened Butter
  • ⅔ cups Granulated Sugar
  • 1 cup Light Corn Syrup
  • 1 Tablespoon Vanilla Extract
  • 3 whole Eggs
  • 1-¼ cup Old Fashioned Rolled Oats

Preparation

Preheat oven to 350 F. Press the prepared and rolled pie dough into a 9-inch pie pan and fix the edges however you like. Pour the chocolate chips evenly into the bottom of the pie crust. Set it aside.

In a large bowl, mix together the butter and sugar until smooth and creamy. Whisk in the corn syrup, vanilla, and eggs until smooth. Fold in the oats.

Pour the entire mixture evenly over the chocolate chips. Bake at 350 F for 45-60 minutes or until the pie is just set in the center. Keep an eye on it and make sure to tent the edges of the crust with a strip of foil if you need to keep it from browning too much.

When done remove pie from the oven and let it cool completely before serving!

This sounds delicious. It reminds me of Pecan Pie but healther and less expensive.

Wow…just came across this and my first thought was “I can’t wait to make this!” and then I realized…I have all the ingredients! So I am gearing up to make it now. :)

I made this for Pi Day (3/14) and it turned out pretty well. I added a few extra chocolate chips, but they didn’t get very melty and they separated from the pie upon cutting. If I make this again, I will probably use at least half a cup and sprinkle them on top so they sink through the filling upon baking. The filling was pretty goopy and the oats didn’t get very soft. All in all, it tastes delicious, but I think my personal preference for this type of pie is a chocolate chip cookie pie, sans oats. Of course, it’s going over very well at work for our Pi Day celebration! Thanks for sharing.

Delicious! So easy to make and so good. I did add some chopped toasted walnuts just because I love chocolate and nuts but this recipe would also be awsome without them!!

This is a great pie! I made it exactly as the recipe calls out and it was wonderful. Next time I might try replacing half the oats with chopped, toasted pecans, but then again I might not. It was wonderful just as it is!

This pie is so amazing, we made two of them in a week! Definitely add more chips…and dark chocolate ones just rule in this recipe. So yummy!
