Description

A banana bread muffin topped with Nutella. These are also great with peanut butter!

Ingredients

  • ¼ cups Olive Oil (or Oil Of Choice)
  • ½ cups Sugar
  • 1 whole Egg
  • 2 whole Very Ripe Bananas, Peeled And Mashed
  • 1 cup Whole Wheat Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 3 Tablespoons Milk
  • ½ teaspoons Vanilla Extract
  • Topping
  • 12 Tablespoons Nutella

Preparation

1.Preheat your oven to 350 F and spray a 12-count muffin tin with non-stick spray (recipe makes 9 muffins).
2. In a large mixing bowl, beat together your olive oil and sugar. Once combined, mix in your egg and bananas. Then add your dry ingredients (flour through salt, preferably pre-sifted together) and mix them in. Then add your milk and vanilla and mix well with a whisk or hand mixer.
3. Spoon batter into your muffin tins and bake for 20-25 minutes or until an inserted toothpick comes out clean. Then remove them from the oven and allow them to cool in the pan.
4. Once the muffins are slightly cooled top them with 1 tablespoon Nutella each and enjoy with a cup of coffee or tea.
