Description

Moist, airy popovers with crisp golden domes. The perfect addition to your holidays!

Ingredients

  • 2 whole Eggs At Room Temperature
  • 1 cup Whole Milk At Room Temperature
  • 1 cup Flour
  • ½ teaspoons Salt
  • 1 Tablespoon Unsalted Butter, melted

Preparation

Position a rack in the lower third of the oven. Preheat oven to 450 F. Grease a 6-count popover pan. Don’t worry if you do not have a fancy popover pan. I know from many years experience that a good old cupcake pan works just as great!

Using a blender, mix the eggs, milk, flour and salt in a medium-sized bowl at low speed until just combined, about 20 seconds. Add the melted butter and blend for 10 seconds.

Pour about 1/3 cup of the batter into each prepared cup (filling about halfway full). Bake for 20 minutes. Then lower the oven temperature to 350 F. Bake until puffed, golden and crisp, 15 to 20 minutes longer. Remove pan from the oven. Using a small, sharp knife, carefully cut around the sides of each popover to release.

Serve immediately.
