Yummy and moist zucchini bread topped with or without butter. Yum!
1. Preheat oven to 325 F.
2. Grease 2 standard-size loaf pans well then set them aside.
3. In a large bowl beat eggs, oil, sugar and vanilla. Mix well.
4. Add grated zucchini (*) and dry ingredients. Mix well.
5. Pour mixture into the two prepared loaf pans and smooth the tops.
6. Bake at 325 F for 60-65 minutes. Test for done-ness at 60 minutes and then every 5 minutes until done. They are done when a toothpick is inserted in the middle and it comes out clean.
