Description

It’s like a pecan pie in one bite. Excellent for when you need a last minute dessert.

Ingredients

  • 1 cup Chopped Pecans
  • 1 cup Packed Brown Sugar
  • ½ cups All-purpose Flour
  • ½ cups Butter, Melted
  • 2 whole Eggs, Slightly Beaten
  • 1 teaspoon Vanilla Extract

Preparation

Preheat oven 350°F.

Combine pecans, brown sugar and flour. Add eggs to the melted butter, then add to the dry ingredients. Add vanilla. Mix well.

Fill muffin cups two-thirds full.

For regular muffins, bake for 20 to 25 minutes. For mini muffins, bake 16 to 18 minutes.

Remove from muffin tins immediately.

these are delicious, do yourself a favor and use muffin tin liners. They also get better with age!

Thanks for sharing this recipe. I absentmindedly used my salt-free butter making these the first time, but I was the only one disappointed!! They are that good.

This is really great! I love pecan pie but seldom eat it because it’s too rich for me. These muffins are perfect. Now I can have my “pie” and eat it too. Thank you.

Thanks for the recipe. I always have made this from a mix that I can no longer get. Now I can made them from scratch.
