The amazing smell and taste of this pie is definitely worth the effort. I swear, you are gonna love it.
For the crust:
Add flour and salt into a bowl. Cut up butter into small squares and add it into the flour a few squares at a time, using either a fork or a pastry blender to combine the mixtures. When the butter is all incorporated, you should get a crumb texture. Add in the water and mix it up to form a dough. Stick the dough into the fridge to chill.
For the filling:
Put the brown sugar, butter, honey, salt, vanilla, flour, cream, cinnamon and nutmeg into a small pot. Turn your heat to medium and let the mixture heat up. When it reaches boiling, remove it from the heat and set aside.
To make the pie:
Preheat the oven to 375ºF.
Pull the dough out of the refrigerator and cut it into two equal pieces. Roll the first piece out to fit your pie pan and lay it inside the pan. Cut off the excess dough and crimp the edges of the crust all pretty like. Add in the apples. Roll out the second piece of dough. Roll it out to the size of your pie top. Grab a pizza cutter and cut about 14-16 half-inch strips from the dough. Lay the strips across the top of the pie in a lattice pattern.
Take the sauce and carefully pour it over the top of the pie. You can put your pie pan on top of a baking sheet if you like, to prevent spills. Now pop your pie in the oven and bake for 35 minutes.
