Creamy avocado and fresh cilantro with an olive oil lemon dressing on garlic-rubbed toasted baguette.
1. Slice the bread, place in a baking dish, then bake for 6 minutes at 360°F. Remove from oven, flip all the slices, then bake again for 6 minutes at 360°F. The slices should be toasted and slightly golden.
2. In the meantime, add the vinegar and olive oil to a bowl. Whisk with a fork, until emulsified. Add salt, then add the fresh cilantro. Stir well. Halve and peel the avocado, then finely dice it. Incorporate it to the dressing delicately, then stir carefully so as not to crush the avocado.
3. When the bread is toasted, rub both sides of each slice with the inside of the half garlic clove. Spoon a generous amount of topping onto each slice, serve immediately.
