A tasty oat muffin with bananas and dark chocolate chunks.
Combine softened butter and bananas, mashing bananas with a fork. Add brown sugar and eggs, and mix well. Add salt, soda, baking powder, oats, and flour, and mix until combined. Fold in chocolate chunks.
Fill mini muffin pan cups 2/3 full, and bake at 350ºF for 9-12 minutes. (If you prefer a regular-sized muffin, you can keep the same temperature and increase the baking time to around 18-22 minutes.)
