Intense cherry flavor in a rich and refreshing cherry ice cream. Simple and quick to make with only four ingredients, and naturally gluten free, too!
Wash and pit the cherries. Put pitted cherries, coconut milk, honey and pure almond extract into the bowl of a food processor or blender. (A food processor will give a chunkier textured puree and a blender will give a smooth texture—it’s a matter of preference.) Blend until desired texture is reached.
Process in a 2-quart ice cream maker according to manufacturer’s instructions. This should take about 20 minutes.
Serve immediately or place in the freezer for a few hours for a firmer consistency.
