Here’s an easy, tasty ice cream sandwich treat. It combines one of my favorites, ginger, with dark chocolate and the sweet Carolina favorite flavor of peaches!
Melt chocolate chips in a double boiler.
Top the bottom side of 24 cookies with 2 teaspoons of the melted chocolate each. Set them (chocolate side up) on a sheet of parchment paper. Let chocolate set up.
When the chocolate is set up, top the bottom side of the remaining 24 cookies with 4 teaspoons of softened peach ice cream.
Sandwich an ice cream topped cookie with a chocolate topped cookie. Consume!
TIP: Once the ice cream is out make a few at a time and pop the assembled sandwiches onto a tray in the freezer.
