Description

Grilled Peaches with Bourbon Butter Sauce.

Ingredients

  • 2 Tablespoons Butter, Unsalted
  • ¼ cups Brown Sugar
  • ½ teaspoons Ground Cinnamon
  • 1 pinch Salt
  • ¼ cups Bourbon
  • 2 whole Peaches, Ripe Ones, Cut In Half And Pitted
  • 1 quart Vanilla Ice Cream, To Serve

Preparation

Combine butter, sugar, cinnamon, salt and bourbon in a medium saucepan. Cook on medium heat until butter and sugar are melted. Remove from heat.

Lightly coat hot grill grates with oil. Place peaches cut side down onto grates. Cook for 5 minutes or until carmalized. Place grilled peach in a bowl, top with a scoop of ice cream and drizzle with glaze.

Ok, I don’t have a ton of experience making desserts with alcohol, but this was VERY boozy. I made this for seven people, so I tripled the recipe. The sauce has a fabulous flavor if used with quite a bit of ice cream, but definitely play with the ratio of sauce to ice cream!! I have made bananas foster several times, and I always burn off the alcohol for that recipe, so I did it for this one, too, although I don’t think I let it burn all the way out. I can’t imagine how strong it may have been if I hadn’t! The next time I make this, and I will definitely make this again, I’ll probably cut the bourbon by a good third and let it burn til it goes out on it’s own.
