Delicious ice cream sandwiches made with sprinkle-infused sugar cookies.
Preheat oven to 375ºF. In a small bowl, combine flour, baking soda and baking powder.
In a large bowl, cream the butter and sugar. Add in egg and vanilla.
Gradually mix the flour mixture into the egg mixture until combined.
Once dough is mixed, add sprinkles and stir until sprinkles are evenly distributed.
Roll cookies into evenly-shaped balls and place on an ungreased cookie sheet. Bake 8-10 minutes or until golden. Bake the cookies so that they are soft rather than crunchy, because once they’ve been in the freezer, they will be hard to eat.
Let the cookies cool completely before filling with ice cream.
