Popcorn covered in yummy caramel, cashews, and white and dark chocolate chips!
1. Preheat oven to 300ºF.
2. Remove all unpopped kernels and pour popcorn into a bowl.
3. Meanwhile:, combine butter, corn syrup, and brown sugar over medium heat. Cook and stir until mixture boils. Continue boiling at a steady rate without stirring for 4 minutes.
4. Remove from heat and stir in baking soda and vanilla.
5. Pour caramel over popcorn and stir to coat.
6. Spread onto greased cookie sheet, and bake for 10-15 minutes (closer to 10 for chewy, closer to 15 for crunchy).
7. Remove from oven and add chocolate chips and cashews, gently toss or stir in with a rubber spatula.
8. Let cool briefly before returning to bowl and serving.
