Description

These muffins come together in no time for a delicious snack or breakfast bursting with berry flavor!

Ingredients

  • 2  Eggs
  • ½ cups Unsalted Butter
  • 1-¼ cup Sugar Plus Extra For Sprinkling On The Muffin Tops
  • ⅔ teaspoons Baking Soda
  • 2 cups All-purpose Flour, Divided
  • ½ cups Light Cream
  • ½ cups Mixed Berries

Preparation

Preheat your oven to 375 F. Next, take a 12-cup muffin pan and spray it liberally with cooking spray. Set aside.

In a large bowl, beat together your eggs, butter and sugar until they are fluffy. Set aside.

In a separate bowl, mix the baking soda together with 1 and 3/4 cups of flour, and slowly add it into your wet ingredients. Continue mixing, adding in your light cream. Continue mixing your batter until all of the ingredients are incorporated. Next, add your berries. Gently fold them into the batter. Then add in the last 1/4 cup of flour and mix until it is incorporated.

With a scoop, fill each muffin cup to the brim. Sprinkle sugar lightly over the muffin cups and place the pan in the oven for 30 minutes, or until the muffins are done. Enjoy!
