Soft and crispy rosemary focaccia bread is perfect as a side or as a great start to any panini.
Combine the flour, sugar, 1/2 teaspoon salt and yeast in a large bowl. Stir in 1 cup of warm water and 2 tablespoons of oil. Mix until a sticky dough forms. Cover and let the dough rise in a warm place for 20 minutes. Punch down the dough. Cover and let it rise for another 20 minutes.
Lightly spray a 12-inch pizza pan with nonstick cooking spray. Punch the dough down and press it into the prepared pan.
Spread the remaining oil over the dough and then sprinkle the rosemary and remaining salt over the bread. Cover and let it rise another 15 minutes.
Preheat the oven to 400 F. Bake the focaccia in the preheated oven until golden brown, 20-30 minutes. Cool in the pan for 15 minutes and then transfer it to a wire rack to cool completely.
