Description

Naturally sweetened cinnamon pull-apart rolls!

Ingredients

  • FOR THE ROLLS:
  • ¼ cups Warm Water
  • 1-½ Tablespoon Yeast
  • 3 Tablespoons Powdered Honey, Divided
  • ¾ cups Milk
  • 3 Tablespoons Unsalted Butter, At Room Temperature
  • 1 whole Large Egg, Beaten, At Room Temperature
  • ½ teaspoons Sea Salt Or Pink Salt
  • 3 cups Spelt Flour Or White Wheat Flour
  • FOR THE CINNAMON COATING:
  • ⅓ cups Powdered Honey
  • 2 Tablespoons Cinnamon
  • 6 Tablespoons Butter, Melted

Preparation

Measure out yeast and put it into 1/4 cup of warm water. Pour 1 tablespoon of powdered honey over it and set aside.

Scald milk by putting it into a microwave safe bowl and microwaving for 1 1/2 minutes. Then add butter into the hot milk and stir until melted. Then let it cool.

Meanwhile, beat egg with a fork in a large bowl. Add 2 tablespoons powdered honey and salt. Pour milk and butter mixture into the bowl with the egg mixture. Mix together and let it cool if still warm.

Add yeast into the cooled mixture. Add the cups of flour mixing as you go. Continue adding it until dough has the right consistency; it shouldn’t be very sticky. Knead dough for 5 minutes. Cover with a towel and place in a warm area to let rise for 25-30 minutes.

Pinch out 1 1/2-inch size smooth balls. Preheat oven to 400ºF.

For the cinnamon coating: In a small bowl, combine the honey powder and the cinnamon. Put the melted butter in another bowl. Dip rolls in melted butter and then roll in the cinnamon and honey mixture. Place rolls in a buttered 9×9 baking dish. Top with any remaining melted butter and cinnamon mixture.

Cover rolls with a sheet of foil and bake at 400ºF for 18-22 minutes, or until the middle rolls are nicely baked and the tops are golden and bubbly. Let sit at least 5 minutes before cutting into them.

To create a cinnamon roll type dessert, finish them off with a glaze or frosting. Best topped when the rolls are nice and hot!
