Served with fig butter, you’ve got yourself somethin’ special

Ingredients

  • ¼ cups Sugar Plus Extra For Sprinkling On Top Of The Muffins
  • ¼ cups Brown Sugar
  • 1 whole Banana, Mashed
  • ½ cups Nonfat Vanilla Greek Yogurt
  • 1  Egg
  • 1 teaspoon Vanilla
  • 1 cup Whole Wheat Flour
  • ½ cups Rolled Oats
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • 1 whole Fuji Or Honeycrisp Apple, Cored And Cut Into Small Pieces

Preparation

Preheat oven to 350 F. Prepare a 12-count standard muffin tin by lightly spraying tin with baking spray. Set aside.

In a large bowl, combine sugars, mashed banana, yogurt, egg and vanilla extract. Set aside.

In another bowl, combine flour, oats, baking powder, baking soda and cinnamon.

Add dry ingredients to wet ingredients and stir just until dry ingredients are moistened. Fold in the apple pieces.

Fill each muffin cup 3/4 full with batter. Sprinkle the top of each muffin with a dash of sugar.

Bake for 15-18 minutes, or until toothpick inserted into the center comes out clean.
