Make this moist banana bread into 4 mini loaves or 1 large loaf. Easily doubled for 2 large loaves.
Preheat oven to 350ºF. Cream margarine and sugar. Add eggs, mashed bananas and buttermilk. Mix in dry ingredients. Divide batter into 4 greased mini loaf pans.
Bake 40 minutes or until toothpick inserted comes out clean. Large loaf pan will bake at 350ºF for 55-65 minutes, until toothpick inserted comes out clean.
Note: Buttermilk may be omitted and the recipe will still work! Test mini loaves at 35 minutes if choosing to do so.
