Description

Orange muffins – they’re delightfully different and refreshing! Great for the morning, evening, afternoon with coffee, or even at 3:40 am when your baby has woken you up for the 3rd time.

Ingredients

  • 2 cups Flour
  • ½ cups Sugar
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • 2 whole Eggs
  • ½ cups Melted Butter (or Oil)
  • ½ cups Milk
  • 1 Tablespoon Dried Orange Peel
  • FOR THE TOP:
  • ½ cups Sugar
  • 1 teaspoon Dried Orange Peel
  • 1 teaspoon Orange Juice
  • 2 Tablespoons Butter, Melted

Preparation

Sift 2 cups flour, ½ cup sugar, 1 tablespoon baking powder, and ½ teaspoon salt together into a mixing bowl.

Then, in a separate bowl, whisk together 2 eggs, ½ cup melted butter (you can also use oil), ½ cup milk, and 1 tablespoon dried orange peel. You should preheat your oven to 400 degrees F as well.

Make a well in the center of the dry ingredients and the add the liquid mixture. Gently stir the muffin batter with a fork. You don’t want to stir the heck out of it. That would make the muffins a bit tough. Just mix them until combined.

Grease a muffin tin and fill 9 to 10 cups 3/4 full.

Now, this is the part that makes these muffins so over-the-top delicious. Get it? Over the top? All right, in a small bowl, toss the ½ cup sugar, 1 teaspoon dried orange peel, and 1 teaspoon orange juice.

Dab the melted butter on top of the batter and then sprinkle with the sugar mixture.

Then put them into your 400 degree oven for 15 to 20 minutes. Mine took 18 minutes.

Oh, and you might want to put a cookie sheet under the muffins as they bake. Sometimes a little of the sugar falls off, and it’s better to have it on the sheet than smoldering and scorching down there in the bottom of the oven.
