These tasty appetizers are easy to put together and oh so delicious! Perfect for a party or just a romantic dinner for two.
Fold a spinach leaf around each scallop half. Wrap a piece of bacon around the spinach/scallop and secure with a toothpick. Place on a baking sheet or broiler pan. Squeeze half of the lemon over scallops and sprinkle with black pepper. Broil the scallops 3-4 inches from the heating element for 6 minutes on each side or until bacon is crisp. Squeeze remaining half of lemon over each scallop again and serve immediately.
