Sweet potatoes baked with caramel sauce.
Peel and cube the sweet potatoes. In a saucepan with 1 inch of water, cook the sweet potatoes until almost done.
Preheat oven to 350ºF.
In a saucepan on the stove or in a microwave bowl, whisk together the brown sugar and flour. Add the water and margarine, and boil the mixture until it thickens.
Transfer the sweet potatoes to a greased 9×13 baking dish and pour the sauce over. Bake for 30-40 minutes, until piping hot.
Note: sometimes I sprinkle on 1 cup of marshmallows and return the pan to the oven for an additional 5-10 minutes until the marshmallows are puffed and lightly browned.
