Description

These muffins may have a long ingredient list but they are worth it!

Ingredients

  • 2 cups Flour
  • ¾ cups Sugar
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • ½ teaspoons Salt
  • 3  Eggs
  • ½ cups Olive Oil
  • ½ cups Applesauce
  • ½ teaspoons Vanilla
  • 1-½ cup Shredded Carrots
  • 1-½ cup Shredded Apples
  • ¾ cups Coconut
  • ½ cups Raisins
  • ½ cups Craisins
  • ½ cups Chopped Pecans

Preparation

Preheat oven to 400ºF.

Combine flour, sugar, baking soda, cinnamon and salt in a large bowl.

In another bowl whisk together the eggs, oil, applesauce and vanilla. Add the carrots, apples, coconut, raisins and craisins to the egg mixture. Mix well. Add to dry ingredients and stir just until moistened. Stir in the pecans.

Bake for 20 minutes.

Makes 18 muffins.

These are great to make-ahead for quick grab-and-go breakfasts in the morning! Also, a purchasing observation: a half a pound of carrots and two medium apples seems to be about the right amount the way our food processor grates it.

These were yummy. I did cut the sugar by half and used only raisin instead of half raisins and half craisins and I was a little heavy handed on the nuts. They were a perfect snack for my whole family.
