Traditionally Caesar dressing is rich and calls for anchovies, which are loaded with sodium. My version uses kipper (herring) which still has that salty fish yummy flavor but without the sodium. Also, since I leave the fish chunky, the protien works as a meal.
In a mixing bowl, mix kippers, mustard, mayo, lemon juice, garlic, capers, salt and pepper. It will make a very chunky dressing. You want this—it makes it more substantial for a meal.
Next, in a larger bowl, add lettuce, cauliflower and cheese. Top with dressing and toss to coat. Put salad on a plate and top with tomatoes.
Note: You can add beans, olives and many other veggies to this. I made this last night for myself, so this is considered 1 dinner-sized serving.
