Fluffy and moist muffins with hints of cinnamon, apples, and almond butter.
1. Preheat oven to 350ºF. Line 12 muffin cups with liners and spray liners lightly with cooking spray.
2. With an electric mixer, mix butter, almond butter, and Greek yogurt until creamy and smooth. Add eggs, one at a time. Add sugars and mix on medium speed until creamy, about 3-5 minutes.
3. While mixing, combine flour, baking soda, salt, and cinnamon. Add flour mixture to wet ingredients in mixer and mix until creamed througout.
4. Add apple (and juice from grating). Spoon batter into muffin cups.
5. Bake for 23-25 minutes until a toothpick inserted comes out clean. Enjoy these fluffy, good-for-you muffins!
