This is a delicious cheese dip, great for serving at get-togethers and parties topped with the unique and DELICIOUS, Captain Rodney’s Boucan Glaze. Find Captain Rodney’s Boucan Glaze via the related blog link on this page.
Preheat oven to 350.
Mix mayonnaise, cream cheese, cheddar cheese and onions and place in a greased quiche pan.
Top with crackers and bake at 350º for 15 minutes.
Top with bacon and Boucan Glaze. Return to the oven for a few more minutes. Serve with Ritz crackers.

I have made this so many times – I now mix the Captain Rodney’s into the dip and then bake it – that way the goodness is all the way through the recipe!

This stuff is awesome! I took some to a birthday party couple days ago, and just like every other time I do that, several requests come in for the recipe. I never have my Christmas parties with a triple batch of this. If you haven’t fixed it yet, get on board. You’ll be wondering what took you so long.
It’s great with tortilla chips. And for the bacon, I buy the bags of real cooked crumbled bacon… NOT Bacon Bits.. but the real thing, cooked and crumbled….in a bag….saves me the time of cooking it and cleaning another pan.
