A sweet and savory corn casserole that will change your opinion of the relative who carted it up your sidewalk. Picture your worst in-law holding the best casserole on this planet. Love is the only answer, as long as you have this dish on the table. People will sob and beg for the recipe. So much better than those corn casseroles with Jiffy mix. Trust me. You have died and gone to corn heaven.
In large bowl, mix egg, corn, chopped onion, sweetened condensed milk and cheese. Pour into buttered casserole dish.
Microwave the butter. Crush the Ritz crackers. Pour butter over crackers along with the sugar. Mix well.
Crumble over casserole and bake at 350ºF for about 1 hour or until brown on top.
Note: for a “busy” casserole, add crumbled cooked bacon and scallions in your corn mixture.

Just made for Superbowl party…although it is tasty, it is VERY sweet…would have liked to taste the corn a little more and the condensed milk a little less…I’d use a little less next time and probably omit the sugar from the topping to keep it a little saltier!
