Rich brownie base, creamy amaretto filling, dark chocolate ganache – these gorgeous brownies are all dressed up and ready to party!
To make the brownie layer:
Preheat oven to 350 degrees F.
Line a 9 x 13-inch pan with foil or parchment paper. Leave a couple of inches sticking up on all sides, to make it easier to get the brownies out when it’s time to cut and serve.
Melt 1 cup butter and 4 ounces unsweetened chocolate in a double boiler or in the microwave, heating just until the mixture is melted.
In a separate bowl, whisk together the eggs and sugar until nice and thick and satiny. Then add in the flour and chocolate mixture. Blend thoroughly.
Pour mixture into the lined pan. Bake for about 25 minutes. Then remove from the oven and allow to cool thoroughly.
To make the amaretto layer:
Whisk powdered sugar, 6 tablespoons butter, milk, amaretto and almond extract (if using) together in a bowl, or use slightly less elbow grease and use your mixer. Filling should be thick, but spreadable. You can adjust the amount of milk as needed to get it the consistency you need.
Spread it onto the cooled brownies.
To make ganache layer:
Melt 3 tablespoons butter and 3 ounces chocolate together using a double boiler or in the microwave on 30 second increments. Once melted, stir to combine. Spread on top of amaretto layer and let set.
Brownies are easier to cut when chilled.
