A different twist on the typical frozen banana daiquiri. This more potent recipe eliminates the ice and gets a sweet, creamy kick from a bit of ice cream.
Combine all the ingredients in a blender and pulse to mix it together and chop up the mint. Pour into a chilled daiquiri glass.
If you like, you can garnish with a sprig of mint or a slice of banana that’s been dipped in lemon juice to keep it from browning. Note that the drink tastes best if allowed to sit in the freezer for about 20 minutes.
