My favorite Christmas cookie. Super crisp sweetness of vanilla that will melt on your tongue.
Mix butter, icing sugar, marzipan and the seeds from the vanilla pod til fluffy and light. Quickly mix in the flour and divide the dough into 4 rolls. Wrap the rolls in cling film and place them in the fridge, preferably overnight or at least till cool and hard enough for you to be able to slice them up.
Whisk the egg and pour some cane sugar on a plate. First cover the rolls with egg (you can use a brush to spread it on) and then roll it in the sugar. Only take one roll out of the fridge at a time seeing as they soften really quickly. Cut the rolls into 3 mm slices, place the slices on a lightly greased baking tray and bake for 10-12 minutes at 175C. I prefer them to be lightly brown at the edges so keep an eye on them.
