This is the perfect breakfast snack to have on Thanksgiving morning or any morning. It’s healthy, moist and so delish!
Preheat oven to 350ºF.
Mix together flour, oats, baking soda and brown sugar. Add your egg, egg white, pumpkin, applesauce and spices and mix until combined, but don’t over mix. Gently fold in apples.
Pour into three mini bread pans or 1 loaf pan.
Bake mini pans for about 30 minutes. Check with a toothpick to make sure it comes out not wet. If using a large loaf pan, bake for about 50 minutes.
Makes 16 large slices or 18 mini loaf pan slices.
