Wallet- and waist-friendly granola.
Granola! Beloved topping to yogurt, the best part of every parfait, and my most recent favorite—sprinkled atop apples and peanut butter. But if purchased from the grocery store it’s usually expensive and packed with miscellaneous ingredients, most of them sugar-based. So I set off to make a healthier, budget-friendlier batch in my very own oven. And this is what resulted!
To be perfectly honest, this isn’t going to win any awards for most glamorous granola. Lots of oil and sugar really does make the good stuff good. But as a lighter everyday alternative, this is pretty darn good!
To prepare: combine all ingredients in a large bowl. Mix together until moist and well-coated. Spread in a thin layer on a greased baking sheet and place in a 325ºF oven. Bake for 10 minutes, then stir and flip the mixture before baking for another 10 minutes, or until the oats are golden brown. Cool before storing in an airtight container and use in as many creative ways as you can!
