Description

This is a nice variation to mashed potatoes, and a fancier dish than a pot of fake mashed potatoes. You can also totally make this with leftover mashed potatoes for a new look at Thanksgiving leftovers!

Ingredients

  • 4 cups Water
  • 1 teaspoon Salt
  • ½ cups Butter, Divided
  • ¾ cups Milk
  • 4 cups Instant Mashed Potatoes
  • 8 ounces, weight Cream Cheese Light Or Regular
  • 1 cup Sour Cream
  • Chives (optional)

Preparation

Preheat oven to 300 degrees. In a large pan, boil water, salt and 6 Tbsp butter. Once boiling, turn off heat but leave the pan on the burner. Add milk and mashed potatoes. Then stir in cream cheese and sour cream. Add chives if desired.

Pour into a casserole dish sprayed with Pam. Slice up the remaining 2 Tbsp of butter and place on top of potatoes. Sprinkle with paprika if desired. Bake for 1 hour.
