Description

The best low fat banana bread you will ever taste. It has very, very, very ripe bananas in it which adds to the sweetness, allowing you to cut back on sugar. It’s light and moist and oh so very good in the morning with coffee or tea.

Ingredients

  • 2 cups All-purpose Flour
  • ¾ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 7 Tablespoons Sugar
  • ⅓ cups Light Brown Sugar
  • 4 Tablespoons Unsalted Butter, Softened
  • 1 whole Egg (large)
  • 1 whole Egg White
  • 1-¾ cup Very, Very Ripe Mashed Banana
  • ⅓ cups Low-fat Or Non-fat Yogurt (plain Or Vanilla)
  • 1 teaspoon Vanilla Extract

Preparation

Preheat oven to 350 degrees F.

Whisk together flour, baking soda, salt and cinnamon.

Beat butter and sugars until well blended. Add egg and egg white; beat well. Add in mashed banana, yogurt and vanilla extract; beat unil blended.

Add flour mixture to wet ingredients in small additions (about 3), beating slightly after each addition. Bake for 1 hour or until a toothpick comes out clean.

I attempted to give this recipe 5 stars, but my oversensitive mouse slid. I was not able to figure out how correct my rating.
Anyways, this recipe was phenomenal! You’d never know it was low fat. Very moist with a wonderful texture.
I had no plain or vanilla yogurt, so I used the Weight Watchers Amaretto cheesecake yogurt I had on hand. It seems to have worked just fine.
I will definitely make this again (and again!)!
