This recipe was inspired by a family discussion that occurred while eating a Toll House Pie that I made. We thought the ingredients of 7 Layer Cookies would taste good in it so here is my creation – enjoy! (For added crunch, you can toast the coconut and walnuts ahead of time.)
Preheat oven to 325 degrees F. Place your favorite pie crust into a pie pan and set aside.
Cream together butter, white and brown sugar in a mixing bowl. Add vanilla extract and eggs. Mix in flour just until blended. Fold in chocolate chips, butterscotch chips, coconut and walnuts. Pour mixture into the unbaked pie crust.
Bake for 30 minutes and then remove it from the oven and spread graham cracker crumbs over the top of the pie. Put it back in the oven and continue baking for an additional 10-20 minutes until center is no longer jiggly. (If top begins to brown too much, cover with foil.)
Great served warm or cold and looks even better served with ice cream, whipped cream, and butterscotch, caramel, and/or chocolate syrup!
