Description

Moist, delicious and simple pumpkin bread with lots of spices that blend together to enhance the pumpkin.

Ingredients

  • 2 cups Sugar
  • 1 cup Vegetable Oil (or Applesauce And Oil That Add Up To 1 Cup)
  • 4 whole Eggs
  • 1 whole (15 Oz. Size) Pure Pumpkin
  • 3-½ cups Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • ½ teaspoons Ground Cloves
  • ½ teaspoons Ground Allspice
  • ½ cups Water

Preparation

1. Preheat oven 350 degrees F. In a large bowl, mix sugar, applesauce and/or oil, eggs and pumpkin. Set aside.
2. In a medium bowl, mix together flour, baking soda, baking powder, salt and spices.
3. Alternate adding and mixing the dry mix and the 1/2 cup of water into the pumpkin mixture until everything is incorporated.
4. Pour into two 8 or 9″ loaf pans and bake for 50-70 minutes.

I usually use the little mini loaf pans that you see at Michael’s stores all the time. They are so cute! Make great gifts too. I bake the loaf inside the pan, take it out, clean the loaf pan, wrap the bread up and place it back in the cleaned mini loaf pan. Tie a bow or tea towel around it and you are set! If you use mini pans, then shorten your bake time. They bake in 40 minutes, but start checking with a toothpick at 30 minutes.

I’ve made this twice now. The only changes I made was to bake it in a bundt pan and adding about a cup of chocolate chips. So yummy! It smells wonderful while it bakes and it just tastes like fall.
