A sweet, icy treat with a kick!
Combine water, peaches, sugar and mint leaves in a medium saucepan. Bring to a boil. Reduce the heat and let simmer for about 5 minutes. Remove from the heat and allow the mixture to cool; discard the mint.
Place half of the peach mix in a blender. Puree until smooth. Pour pureed peach mixture into a 13 x 9 inch glass baking dish. Combine the remaining peach mixture, lime juice and rum in the blender. Puree until smooth. Add this to the baking dish. Stir to combine.
Put the dish in the freezer and freeze the mixture for 8 hours or until firm. Remove from the freezer, scrape it with a fork until fluffy. Spoon into serving dishes or glasses and garnish with peaches and mint. Serve immediately.
