Description

A delicious moist muffin to enjoy with your morning coffee!

Ingredients

  • 1 cup Regular Flour
  • 1 cup Whole Wheat Flour
  • ½ cups Granulated Sugar
  • 1-½ teaspoon Baking Soda
  • 2 whole Eggs
  • 1 cup Vanilla Yogurt
  • ¼ cups Butter, Melted
  • 1 teaspoon Vanilla Extract
  • 1 cup Chopped Strawberries
  • ¼ cups Brown Sugar

Preparation

Preheat oven to 375F. Mix together flours, sugar and baking soda in a large bowl. In another bowl, mix eggs, yogurt, butter and vanilla. Toss strawberries into flour mixture and mix. Pour yogurt mixture into flour mixture and stir. Spoon batter into muffin tin lined with paper liners. Sprinkle brown sugar on top of each muffin. Bake 20-25 minutes or until tops are golden brown.

I thought it was odd this recipe didn’t have any salt, so I added 1/2 tsp. Otherwise a good recipe that I would consider making again. I got 15 normal sized muffins out of it.

These muffins were really good – just sweet enough but not too sweet. The mix seemed really dry but they cooked up nicely. Users beware: don’t make the same mistake I did. I didn’t realize this recipe makes 18 servings until my 12 muffin cups seemed really full. They still cooked up nicely but we could have had more leftovers if I had noticed. Overall, a great recipe. Thanks!
