Light, summery fruitiness.
Wash apricots, cut in half and remove pit. Process apricots, water and sugar in a food processor until everything is liquid and there are no chunks of apricot. In a separate bowl, whip the cream until it starts to get thick but not until it is like whipped cream. Fold apricot mixture into cream. Put mixture into an ice cream maker and follow the instructions for your ice cream maker.
Then, when it’s done, take a big spoon and eat it out of the ice cream maker. Forget trying to get it into a bowl to put in the freezer!
Makes about 1 quart.
