Description

Another use for overripe bananas! I also include a low-fat version that tastes just as fabulous.

Ingredients

  • 1 cup Sugar Or Splenda
  • 1 cup Ripe Bananas, Mashed (3 Medium)
  • ⅓ cups Vegetable Oil Or Applesauce
  • 2 whole Eggs
  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Salt
  • 1 package (8 Oz. Size) Cream Cheese (or 1/3 Less Fat Cream Cheese), Room Temperature
  • ⅓ cups Butter (or Reduce To 3 Tablespoons), Room Temperature
  • 1 teaspoon Vanilla Extract
  • 2 cups Powdered Sugar

Preparation

1. Combine sugar, bananas, oil and eggs in a large bowl. Beat together.
2. Stir in flour, baking powder, baking soda, cinnamon and salt.
3. Pour into a greased 9×13 pan and bake at 350ºF for 25-30 minutes. The top will be light golden brown. Cool completely.
4. In a large bowl, beat butter and cream cheese together until creamy. Add vanilla extract. Add powdered sugar a little at a time (1/2 cup increments works well for me).
5. Spread frosting on cooled bars and serve. Will keep for at least 3-4 days if covered tightly. After 2 days I put it in the fridge just in case.

I used the oil and only made a half batch of the icing with 1/2 block cr cheese, 3 tbl of butter, vanilla & 1 c pwd sugar- my boys prefer the un-iced ones but I love the cream cheese icing! So moist!

I have made both versions and I really can’t tell one from the other. Sometimes you can… like using applesauce instead of oil in a brownie mix … But these hold up really well to the lower calorie substitutions. I’m so glad the kids liked them! Great source of potassium.

These bars were great! I used the “healthier” version. I also used white whole-wheat flour. They came out moist and delicious and nobody even suspected that I used applesauce instead of oil! My kids even asked for seconds. This recipe is a keeper!

these are awsome, made them three times so far, nice change from banana bread. My husband like them so much they are what he wated instead of cake. Easy to follow recipe and easy to make.
