Description

I made this zucchini bread with unblanched almond meal from Trader Joe’s and substituted Sun Crystals for sugar. It was a total hit at the picnic I just got back from, and pretty healthy compared to normal zucchini bread!

Ingredients

  • 1-¼ cup Whole Wheat Flour
  • ¾ cups Almond Meal
  • 1 Tablespoon Flaxseed Meal
  • ¼ teaspoons Salt
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ⅔ cups Sugar, Or Sugar Substitute
  • 2 whole Eggs
  • 1 Tablespoon Oil
  • 1-½ teaspoon Vanilla Extract
  • 2-½ cups Zucchini, Shredded

Preparation

1. Preheat oven to 350ºF. Spray the inside of a 9″x5″ loaf pan with nonstick spray.
2. Mix together dry ingredients (flour, almond meal, flax, salt, baking soda, baking powder, sugar).
3. Mix together wet ingredients (eggs, oil, vanilla, zucchini).
4. Combine wet and dry ingredients.
5. Pour into the loaf pan and bake for 40-45 minutes or until a toothpick inserted comes out clean.
6. Enjoy!
