A Southern treat with a kick of Cajun!
Rinse the peanuts and pull off the stems. Place them in a large pot or French oven. Cover the peanuts with water, and then add a few more inches of water; the peanuts will float.
Bring the water to a boil and add salts and seasoning. Cook for 30 minutes and stir a few times.
Reduce heat to low and simmer for 2- 2 1/2 hours, or until desired texture.
