Description

I developed this recipe for banana bread years ago and each and every time I make it, someone says it’s the best banana bread they have ever had. I share the recipe so often I thought I would share it here.

Ingredients

  • 1-¾ cup All-purpose Flour
  • 1 cup Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 4  Overripe Bananas
  • ⅓ cups Butter Flavored Shortening
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Banana Extract
  • 2 Tablespoons Milk
  • 2  Large Eggs
  • Melted Butter, To Brush On Baked Bread

Preparation

Combine dry ingredients (flour, sugar, baking powder, baking soda, salt) in a large bowl.

Combine wet ingredients (bananas, shortening, vanilla, banana extract, milk, eggs), smashing bananas with a potato masher if needed.

Combine wet and dry ingredients with a wooden spoon or strong rubber scraper by hand. Do NOT use an electric mixer.

Pour into a greased loaf pan (sweet bread size or full loaf size).

For 2 small loaves, bake at 350ºF for 40 minutes. For 1 large loaf (in a standard size loaf pan), bake at 350ºF for 30 minutes. Cover with tented foil and bake an additional 30 minutes.

Brush top with butter while loaf is still hot.

Hello,
Your recipe sounds good, do you have a favorite banana extract you like to use ??
I have about 10 bananas in the freezer now…..This would be a great way to use some.
